On the menu tonight is Massaman beef curry with cauliflower ( as it is in season and abundant at the moment)
20 ml Extra Virgin Olive Oil
600g Diced Stewing Beef
400g Sourced Massaman Curry
The colder weather has set in, and we are trying to eat low carb to ward off Winter kilos which slowly creep on.We have increased our vegetable consumption and pairing them with protein. Sugar has been eliminated as has dairy for the time being.
Heat oil in heavy based saucepan, add Beef and saute till browned. Add sourced Massaman curry sauce base , cauliflower and simmer 20 mins. Add coconut cream simmer 5 mins. Serve with chopped coriander and peanuts.
